Easter Brunch in Quarantine

Easter Brunch was dope despite the circumstances. We made ourselves some Country Fried Chickrooms, Cinnamon Spice Pancakes, with scrambled Vegan Egg with spinach and mushrooms, potato hash browns, butter, and of course… Maple Syrup! Also, I have been dying to experiment with using rice paper as the “skin” of the fried mushrooms and we finally did it! It made the final result super crispy; wrapping the mushrooms in wet rice paper and then dunking them in the vegan egg + batter to fry! You gotta try this hack! 😋 If you do let me know.
